After a somewhat disappointing experience with the last dish (Apple Braised Chicken), I was really hoping for some success with my next venture . . . and I wasn't disappointed!! These BBQ Turkey Joes were delicious and extremely easy! One could even make them in advance and just warm up individual servings. Anyone with a lot of mouths to feed will appreciate the speed and like-ability of this dish. I served mine with a side of freshly picked corn-on-the-cob, yumm!
Ingredients:
1 pound lean ground turkey
1/2 medium bell pepper, chopped
1/2 medium sweet red pepper, chopped
1/2 medium onion, chopped
1/8 tsp cayenne pepper
1 cup barbecue sauce
4 medium multigrain hamburger rolls, sliced in half
Brown turkey in a nonstick skillet coated with cooking spray, about 8 to 10 minutes. Drain off liquid. Add peppers and onion and cook until tender, about 3 minutes.
Add barbecue sauce and cayenne pepper; heat thoroughly, stirring frequently, about 2 minutes.
Top bottom half of buns with turkey mixture; cover with top half of bun and serve.
Let me know if you try it and what you think. Enjoy. Cheers! Brett

I've done this before. We were out of hamburger meat so I used turkey meat. Michael didn't like it as well, but I thought it was fine. Actually we just used chili sauce and brown sugar, but maybe i'll try BBQ next time :)
ReplyDeleteThe BBQ sauce was great! Thanks for making dinner, honey!
ReplyDeleteErica- Let me know if you get a chance too, and what you thought (of course.)
