Banana Bread

I love Bananas (did I mention that?) and I love Banana Bread. I haven't found a Banana Bread recipe that compares to my Mom's, but I always forget to ask her for it. So, I go back, time and time again to the recipe that I am sharing with you today. It's pretty good and have tweaked it a bit here in there to make it a little less bad for you. (Thanks Kendra for reminding me and Rachel for encouraging me to post tonight.)

Ingredients:

Cooking Spray
1 cup all-purpose flour
1 1/2 cups whole-wheat flour
1 cup sugar
3 1/2 tbsp baking powder
3 tbsp vegetable oil
3/4 cup milk
1 "heaping" cup mashed bananas
1 egg
1 cup finely chopped nuts

Preheat oven to 350 degrees. Grease loaf pan with cooking spray and then flour it. Measure and combine all ingredients in a mixing bowl and beat on medium speed for about 1/2 a minute. Pour into a loaf pan and bake for about 55 minutes. (Test center with a toothpick.) Let it cool, slice and enjoy.

  1. Hey Brett. Just today I made Banana Bran Muffins. I haven't ever made that recipe into bread but it makes great muffins. Let me know if you want to try to recipe.
